dropped a valve sea.. what to do next?

Hello,
New here, new to posting in forums, here goes.
I have an 82 GS 1100 i have been building piece by piece for 20 years. its 1428cc, NOS, web 212 cams, with a lot of other engine modifications. using 87 gsxr front end/rear rim. i run it on the street, not a drag racer. well it dropped a valve seat, so the head is done. i have a stock head i could replace it with, but i wanted to stop and think about my options.

the head that was on it had never been ported and was using stock valves. it had HD springs, 370 lift 256 duration cams, GSXR rocker arms, the head was shaved early on to up compression when it had a smaller bore kit, copper head gasket .080 and aluminum base gasket .020 thickness. cyl block by Weisco and O-ringed.
it has 1428cc 11.7:1pistons, 40mm RFS carbs, supertrapp ex without any baffle pack, MSD MC4 ignition, 87 GSXR oil cooler, welded crank w/ strait cut gear. lot of time and $ so far.
So here is my question:

what direction would you guys recommend?
i don't know how much porting would do for this?
someone i talked to said keep stock valves??
how much would going to bigger valves help?
and how much bigger, new seats?$?$$?
thought it had short guides, but they look stock now that i have it apart. should i consider going to short guides?
i read the 1100 head gets a lot of help by epoxying up the ports, but on a bike i ride to Daytona / sometimes 100-200 miles in a day?
(i don't ride this everyday, breaks too much LOL).

i have not hit the lottery and this is looking to add up. like to get the most for my $$
would buying a head already built/ used be a good option for this?
for the $ should i consider going to a turbo?
